NATSO Foundation Releases Travel Center Foodservice Trends Toolkit

The NATSO Foundation released the Travel Center Foodservice Trends Toolkit, a practical industry guide created in collaboration with the NATSO Foundation’s 2026 Food and Beverage Steering Council to help truck stop and travel center operators build, improve and innovate their food service programs.

Foodservice has become one of the top differentiators for travel centers and truck stops and the right offerings can help operators grow revenue while driving customer loyalty.

The NATSO Foundation’s Travel Center Foodservice Trends Toolkit is available for $250 here.

“Drivers and travelers are looking for food options that are fast, convenient, consistent and worth stopping for,” said Amy Toner, executive director of the NATSO Foundation. “This toolkit helps operators evaluate their foodservice programs through the customer’s eyes and identify opportunities to strengthen the overall travel center experience through food.”

The toolkit provides information on customer expectations, food program models, beverage trends, operational considerations, food safety and lessons from leading operators. It features firsthand perspectives from Wawa, Parker’s Kitchen, Port Fuel Center, University Korner, Busy Bee, Coffee Cup Fuel Stops Travel Plazas, Thorntons, Alto-Shaam, McLane Company and Food Forward Thinking, among others.

Key findings from the toolkit include:

  • 81% of professional drivers surveyed said they had gone inside a travel center in the past month but left without purchasing food or beverages. Long lines and wait times among the top reasons why.
  • Only 33% of drivers say sit-down dining influences their travel center choice, with the remaining 67% gravitating toward faster grab-and-go and quick-serve alternatives.
  • 13% of drivers are ordering food and having it delivered to their trucks while parked. Operators can tap into the trend through QR codes at the pump, mobile apps and third-party delivery partnerships.
  • Energy drinks represent 30% to 35% of cold vault sales, while protein drinks and value-added dairy are among the fastest-growing beverage categories driven by health and active-lifestyle trends.
  • The rise of EV charging stations is creating an extended dwell time opportunity. Drivers charging for 20 to 30 minutes are far more likely to want a sit-down coffee, a full hot meal or a browse through the retail floor.

The toolkit also addresses the operational side of running a food program, including managing labor in a high-turnover environment, controlling food costs, selecting the right kitchen equipment and designing a layout that removes friction from the customer journey.

A bonus section drawn from the NATSO Connect 2026 Food Focus Forum shares practical insights, including how to define innovation beyond new menu items, how to use vendor partnerships as an extension of your Research and Development team and why consistency matters more than creativity.
